Blooming Quesadilla Recipe

  • 3 cups cooked and shredded chicken (375 g)
    • You can use rotisserie chicken or cook and shred your own for a richer flavor.
  • 1 onion, chopped
    • A medium-sized yellow onion works best for a balanced flavor.
  • 1 red bell pepper, chopped
    • Adds a sweet crunch and vibrant color.
  • 1 jalapeño, chopped
    • For a bit of heat, adjust according to your spice preference.
  • 1 cup taco sauce (260 g)
    • Choose your favorite brand or make your own for a personalized touch.
  • 20 taco-size tortillas
    • Flour tortillas are preferred for their flexibility and soft texture.
  • 3 cups shredded cheddar cheese (300 g)
    • Offers a sharp, tangy flavor that melts beautifully.
  • 3 cups shredded Monterey Jack cheese (300 g)
    • Adds a creamy, mild flavor and helps balance the cheddar.


Step 1: Preheat the Oven

  1. Preheat the Oven: Set your oven to 375˚F (190˚C) to get it ready for baking.
  2. Line the Baking Sheet: Cover a large baking sheet with parchment paper to prevent sticking and make cleanup easier.

Step 2: Prepare the Filling

  1. Combine Ingredients: In a large mixing bowl, combine the shredded chicken, chopped onion, red bell pepper, jalapeño, and taco sauce. Mix until the ingredients are well distributed and the chicken is coated with sauce. Set aside for later.
