DANDY-DO COOKIES
- Preparation:
- Line a cookie sheet with parchment paper and arrange Ritz crackers in a single layer.
- Making the Caramel Sauce:
- In a small saucepan, combine the sweetened condensed milk, butter, and brown sugar.
- Cook the mixture over medium heat for 5-6 minutes, stirring often, until it thickens and turns golden brown.
- Adding Milk and Peanuts:
- Reduce the heat to low and whisk in the milk, and optionally, vanilla extract, and chopped peanuts until the mixture is smooth.
- Cook for an additional minute, then remove the saucepan from the heat.
- Assembling the Cookies:
- Use a cookie scoop or spoon to top each Ritz cracker with a dollop of the caramel mixture. Ensure the crackers are evenly coated.
- Allowing to Cool:
- Allow the cookies to fully cool on the parchment-lined cookie sheet. The caramel will set as it cools.
- Storing:
- Once cooled, transfer the Dandy-Do Cookies to an airtight container for storage.
Note:
- For added crunch and flavor, you can sprinkle chopped peanuts over the caramel mixture on each cookie before it cools.
- The addition of vanilla extract enhances the flavor of the caramel sauce, but it’s optional if you prefer a simpler taste.
